How do I update the placeholder/button text later or disable the footer mailing list?

You can change the mailing-list text or turn the feature off anytime:

Go to Design > Footer in the editor.
To update text: click the Edit (pencil) icon, adjust Input Placeholder and/or Button Text, then click Save.
To disable it: switch Show Mailing List Off.
